London: Printed for A. Constable & Co. , 1821. 12mo, pp. xvi, 464. Near contemporary black calf, spine divided by raised bands with double gilt rules, red morocco labels, other compartments tooled in gilt, boards bordered with blind rolls, marbled edges and endpapers. Some toning, dampmarks to blank corners of first gathering. A little rubbed to extremities, boards slightly marked. Binder’s ticket of Farie in Glasgow to front pastedown. First published in 1817 as ‘Apicius Redivivus’, in this third edition Kitchiner states that the book is ‘almost entirely re-written, -- He has not printed one Receipt-- that has not been proved in His own Kitchen’ (p. xiii). The text was popular, much-reprinted, and influential - especially on Mrs Beeton. The introduction contains a 3-page list of cookery books published between 1513 and 1814 reportedly consulted by the author (’my tedious progress through these books - many of which did not afford the germ of a single idea’, p. 27).
