Special Christmas Edition [Dorling Kindersley, London, 1989]. #62 of 450 copies SIGNED by Elizabeth David. It was her first in-depth foray into purely French cuisine [A Book Of Mediterranean Food, published in 1950, was largely drawn from previously published essays and was more general in nature] & remains a culinary classic. Illustrated with the John Minton line drawings from the 1951 edition plus various French paintings. Laminated pictorial boards; light foxing to the signed limitation page; occasional blue pen dot; an excellent copy in the very good dustwrapper [clipped, minor puncture to front of spine, light discolouration to inner surface]. ISBN: 0863182518

Synopsis

A remarkable book ... food is treated with reverence, with understanding and, above all, with care' - Sunday Times Full of authentic recipes, this richly evocative book describes some of the splendid regional cookery of France. The food of each area has its own particular flavour, derived naturally from local resources. FRENCH COUNTRY COOKING shows the immense diversity of the cuisine through recipes that range from the primitive peasant soup of the Basque country to the refined Burgundian dish of hare with a cream sauce and chestnut puree. There is also invaluable advice on suitable cooking utensils and the use of wine in the kitchen.
