Excellent color illustrations by Robert Hall of Rose Hill, North Carolina .The author is an African American who was born and grew up in a small farming community in southeastern North Carolina. She later moved to New Jersey and was employed as a social worker. She was inspired to write this book while a student in the class of Dr. Ivan Van Sertima at Rutgers University. Dr. Van Sertima teaches a course entitled "African Presence in American Culture". Explains how the cuisine in the South evolved from slavery and is imbued with African heritage transported by the slaves. Very scarce publication .
