Kirkland: Privately Published, 1970. First Thus. Soft cover. Very Good+. Privately printed, circa 1970. 4to comb-bound in plain wraps. (429 pgs). Not illus. No title page; Title is at the top of page one. "The following food formulas were developed by a very successful cafeteria chain with over 60 outlets located in the western half of the United States..." "The formulas were prepared in the F5 (F stands for formula) quantity and packed in a vacuum sealed, water proof bag of 15 to 20 servings..." "Each formula was printed on a 5 x 8 card and filed under 21 categories..." "Some had serving instructions on the back of the card which, in this book, are on the following page." "Each formula is reproduced here in the same order as the original card file." ("two to a page"). Laid in is an unsigned & un-dated hand-written letter to the attention of an individual at the Library of Congress stating the donor's wish to give a copy of this book to the LOC, giving a brief reference to the span of Mannings, Inc. (1908-1970) & requesting an LOC # in spite of the non-copyright status of the material. An LOC number is affixed on a label on the inside of the front cover. The letter further states: "The formulas are unique in that ingredients quantities provide three different servings amount for each entre (sic)." Each card has the following columns: Procedure, Ingredients, and formula quantities 1F,3F,& 5F (example: for Roast Beef Hash: 4 lb, 12 lb, 20 lb). On-line research reveals the history of Mannings & their popularity. Some photos may be seen on-line. Vg condition; small stains upper front cover. We have not located a copy of this book in LOC & it appears not to have been published. Was this a singular & private production & this is a unique copy? In any case, it is rare and an almost unequaled resource for research & actual use for multiple client food preparation.
