A collection of recipes in two volumes collected in fourteen sections, most likely issued individually: Sandwiches, Salads, Breads, Deserts, Cakes, Cookies & Frostings, Soups, Meat & Poultry, Meat Extensions, Meatless and Fish Recipes, Meat Substitutes, Dressings, Relishes and Sauces, Vegetables. Recipes appear to be assembled for a specific course as each section contains a unique identification code, most likely a course number. Recipes are large-scale, serving between twenty-five and fifty-five, and contain remarks on garnishing, possible variations, cost, and size of serving (specifically which size ladle/dipper to use) in addition to the ingredient list and instructions. New York State College of Home Economics had its early beginnings in 1900 when Martha Van Rensselaer arrived at Cornell to organize a reading course for farmers' wives and evolved into a fully accredited program of home economics. A memoir of a railroad steward, having served in dining-car service on the Portland to Seattle run since 1911. In part a guide to 'Humanized Hospitality' on the railroads, and in part profiles of some of the celebrities the author served. Green-titled wrappers, backed in brown cloth; small stain to front panel, otherwise near fine. Inscribed at length in green ink by the author on the free front endpaper, and dated 1953. Marshall for her assistance with this book. Includes sections on breakfast, eggs, fish, hot dishes, cold dishes, curries and pilafs, and luncheon. Recipes include 'Apums', 'Fadge', and 'Baps'. Previous owner's pencil name to half-title, and the ownership label of the Sontheimer Foundation. Some wear and staining to the black and red printed tan cloth.
