Chicago: Regan Printing House, 1892. (USA) No markings, pages toned, a bit of rubbing to cover edges, hinges solid, the gold colour to the titles have rubbed away, overall Very Good vintage copy; no just jacket. Very dark green cloth, all eges marbled, 315pp [blank page, then viii pages of index. Line drawings. This cookbook originally appeared in about 1884 and went through several editions. There must be close to 1000 recipes, presented 3 per page in the old way without the ingredients listed beforehand. The recipes presume some knowledge of general cookery. There is a lot of lore and advice. Here on cooking Yarmouth Bloasters (a type of fish): "The best way ...is to make incisions in the skin across the fish, because they do not require to be so long on the fire, and will be far better than when cut open." On rabbit: "The best way of cooking rabbits is to fricasse them." There are recipes for making lard and headcheese: "Having thoroughly cleaned a hog's head or pig's head split in two with a sharp knife......" The cake recipes are interesting.
