Drexel established the Drexel Institute of Art, Science and Industry in 1891 as a non-degree-granting institution (in 1914 the school began granting bachelor of science degrees). This cookbook would have been used by the Department of Domestic Science and Arts. The author, Helen M. Spring, was the first instructor of cookery at the Institute. Contents: Beverages -- Mushes and Gruels -- Broths and Soups -- Vegetables -- Eggs -- Meat and Fish -- Cheese -- Salads -- Fruits -- Ice Cream -- Dishes Prepared with Gelatine -- Pastry -- Bread anc Cake -- Mixtures with Baking Powder -- Cakes -- Candy. In Good+ Condition: spine repair; loss at upper corners of wrapper; lower corner of front wrapper creased; discoloration along fore-edge of front wrapper; pages are clean and solid.
