Polycarpe Poncelet's "Chymie du Gout et de l'odorat", or 'Chemistry of Taste and Smell', is a rare 18th-century dissertation on the effects of liquor and other confections on health and well-being. Poncelet notes the effects of consumption of excessive alcoholic beverages, as well as the health benefits of wine and beer, sugar, coffee, lemon, teas, and anise seeds. Humorously, Poncelet develops a theory of the harmonies of alcohol proportions compared to music.
