Freedom, CA: Crossing Press. Very Good. 1988. Softcover. Soft cover, small oblong book 8" X 5.75" ; 175 pp. Index. Edge soil otherwise a clean, tight copy. Scheele is a former professional baker and offers a European-style bread recipes for the home. Some of these recipes, such as Workman's bread, were his grandfathers bakery in Flanders. Workman's bread was less expensive because a greater amount of bran in it, thus being 3 cents less per loaf. Other recipes are attributed to his mother-in-law who emigrated to Brazil from Germany in 1910. This bread is best baked in an earthen oven and Scheele gives instruction to obtain a similar effect at home. Packed full of tantalizing recipes from across Europe like Original Black Bread from Eastern Germany; Ella's Buttermilk Rye Bread was adapted to the hot humid climate of Brazil, Dutch Steamed Bread. Sweeter breads include Dutch apricot loaf, and Portuguese Loaf.
