This is a facsimile reprint of the 1852 edition by Francatelli who was the Maitre d'Hotel and Chief Chef to Queen Victoria and who was a champion of culinary economy. It was he who said that he could feed a thousand families a day on food that was wasted in London. This little book, written for the working class, aims at the greatest amount of nourishment from the least possible expense through culinary skill and economy, an example of the "altruistic" cookbook which concerned itself with the proper feeding of the working class. There are 241 recipes. A recipe for making an economical soup calls for saving the water used in large families for boiling joints of salt beef, culling off the fat, and adding a list of vegetables and grains. A Pea Soup recipe for 6 people starts off with a broth first made with 2.5 pounds of pickled pork or the same quantity of leg of beef.
