NY: J. Gancel, 1946. (USA) Stated tenth edition, 1946. Owner's name and address to inside front cover, owner's name stamp to the rear end paper where there is oval label of Pacfic Cruise Lines, pages generally clean, hint of spine slant, Good used copy; no dust jacket, Dark tan cloth, 528pp, index,a few small B&W illus. in text. This book is billed as "the most complete and concise glossary ever compiled and published with over 8,000 recipes and 300 articles: alimentary, hygenic & household recipes; table service; order of service of wines, market list, etc." The author was born in Rennes, France in 1874 and has 55 years of experience as chef with the best hotels of Europe and America including the Waldorf-Astoria and Sherry's, NY; Cafe de la Paix, Paris; Grand Hotel, Paris; Baron Rothchild, Vienna; Brazilian Embassy, Brussels, etc. He worked at the Waldrof-Astoria where the Waldorf salad originated and here is his note on it: Waldorf: "Celery, apples in jul., heart of lettuce, cov. may;, lob. of walnuts, sw. pep. in jul." The Waldorf salad was created at New York's Waldorf-Astoria Hotel in 1896 not by a chef but by the maître d'hôtel, (dining room manager) Oscar Tschirky, the Waldorf salad was an instant success. The original version of this salad contained only apples, celery and mayonnaise. According to George Lang, Tschirky was so annoyed that walnuts were added to the recipe that he would go to the hotel to order the salad only to pointedly remove all the walnuts before he ate it. Gancel's version has heart of lettuce and sweet peppers julienne, so one supposes that the recipe evolves. There are about 500 entries on Egg dishes alone. Eggs Lakme: Poached in crust filled with sweetbread salpicon with curry, colbert sauce with chopped tarragon. Eggs Manon: Egg croquettes filled in center salpicon chop shape, supreme sauce with truffles, cock's kidneys around. Here is his advice on Mussel poisoning: " ...give the person a lemonade with a few drops of ether in it. Do not use raw mussels that are opened when bought." (1.3 JM HOQ 100/3. 10th. Hardcover.
